Wendy's Lemon Bread

Ingredients:

1 stick butter

1 cup sugar

2 eggs

1-1/2 cups flour

½ teaspoon salt

1 teaspoon baking powder

½ cup milk

lemon peel (from one whole lemon, use zester)

½ cup lemon juice (combine juice of one lemon with lemon extract to get a ½ cup)

¼ cup sugar

  1. In a mixer, blend butter, 1 cup sugar and eggs.
  2. Add flour, salt and baking powder mixture (already blended).
  3. Add milk and lemon peel.
  4. Pour ingredients into a bread pan (approx. 9" x 4").
  5. Bake for 1 hour at 350 degrees.
  6. Combine lemon juice and ¼ cup sugar (allow it to "meld" while baking).
  7. Spoon above onto loaf right when you take it out of the oven.
  8. Let sit in pan for at least an hour or more so that juice is totally absorbed.

Note:  Do not attempt to double the recipe.  I've tried it, and it never works.
